Contributing to a regional effort to improve access to healthy, affordable food, Elon Law Professor Eric Fink has joined the Renaissance Community Co-Op (RCC) Board of Directors.
[/caption]states that it was founded in 2012, “to create a democratically owned and controlled grocery store in Northeast Greensboro that provides all of Greensboro with healthy foods at affordable prices and has a commitment to locally sourced foods, community education and dignified jobs.”
Portions of Northeast Greensboro are characterized as a “food desert,” defined by the USDA as an “urban neighborhood [or] rural town without ready access to fresh, healthy and affordable food.”

In addition to serving as an RCC board member, Fink has contributed voluntary service with the national Farm Labor Organizing Committee (FLOC) and the Greensboro, N.C.-based Beloved Community Center. Fink has provided analysis of labor law issues recently for regional, national and online news and information outlets including , the Pennsylvania-based Rick Smith Show, , NPR-affiliate WFDD radio and WFMY News.
